There is an Old French word, bescuit, that is derived from the Latin words bis (twice) and coctus (cooked) - OR "twice-cooked" - and this is because biscuits were originally cooked in a two step process: first baked, then dried out in a slow oven. At Mrs. Beaster's, all our treats are made using this method.
